Juni 2021 <a href=\"https:\/\/www.fda.gov\/food\" target=\"_blank\" rel=\"noopener\">Lebensmittel- und Arzneimittelbeh\u00f6rde<\/a> (FDA) hat ihre endg\u00fcltige Regelung zum Identit\u00e4tsstandard f\u00fcr Joghurt herausgegeben.<\/p>\n<p>Identit\u00e4tsstandards legen Anforderungen an den Inhalt und die Herstellung bestimmter Lebensmittel fest. Eines der Ziele der Nutrition Innovation Strategy ist die Modernisierung von Lebensmittelstandards, um die grundlegende Beschaffenheit und N\u00e4hrstoffintegrit\u00e4t der Produkte zu erhalten und der Industrie gleichzeitig Flexibilit\u00e4t f\u00fcr Innovationen zur Herstellung ges\u00fcnderer Lebensmittel zu geben.<\/p>\n<p>Derzeit hat die FDA separate Identit\u00e4tsstandards f\u00fcr Joghurt, fettarmen Joghurt und fettfreien Joghurt. Nach der endg\u00fcltigen Regelung fallen sowohl fettarmer als auch fettfreier Joghurt unter die allgemeine Definition und den Identit\u00e4tsstandard der FDA, der ern\u00e4hrungsphysiologisch ver\u00e4nderte Versionen traditioneller standardisierter Lebensmittel zul\u00e4sst.<\/p>\n<p>Die endg\u00fcltige Regelung erweitert die erlaubten Zutaten in Joghurt, darunter S\u00fc\u00dfstoffe wie Agavendicksaft und rekonstituierte Formen von Milchprodukten. Sie legt eine Mindestmenge an lebenden und aktiven Kulturen fest, die Joghurt enthalten muss, um den optionalen Hinweis \u201eenth\u00e4lt lebende und aktive Kulturen\u201c oder einen \u00e4hnlichen Hinweis auf dem Etikett tragen zu d\u00fcrfen. Bei Joghurt, der zur Inaktivierung lebensf\u00e4higer Mikroorganismen behandelt wurde, ist der Hinweis \u201eenth\u00e4lt keine lebenden und aktiven Kulturen\u201c auf dem Etikett vorgeschrieben. Dar\u00fcber hinaus unterst\u00fctzt die endg\u00fcltige Regelung viele Innovationen, die bereits im Joghurtsektor umgesetzt wurden. So d\u00fcrfen Hersteller Joghurt weiterhin anreichern, beispielsweise mit den Vitaminen A und D, solange die gesetzlichen Anreicherungsanforderungen erf\u00fcllt sind. Die Regelung erlaubt auch verschiedene Joghurtsorten und -texturen, solange sie die Anforderungen des Identit\u00e4tsstandards erf\u00fcllen.<\/p>\n<p>Die Aktion ist teilweise eine Reaktion auf eine B\u00fcrgerpetition der National Yogurt Association, die heute Teil der International Dairy Foods Association ist.<\/p>\n<p>Das Datum f\u00fcr die Umsetzung dieser endg\u00fcltigen Regelung ist der 1. Januar 2024.
