Salud Canadá released a list of new food additives that can be used in HMF, including carrageenan, gellan gum, lecithin, monoglycerides, potassium citrate, potassium hydroxide, and sodium citrate.
These food additives are usually used as emulsifying, gelling, stabilizing, thickening agents, pH adjusting agents, acid-reacting materials, and water correcting agents.
