Le 2 septembre, le La FDA<\/a> Un nouveau colorant bleu issu de la fleur de pois papillon a \u00e9t\u00e9 approuv\u00e9. Les principaux composants colorants de l'extrait de fleur de pois papillon sont les anthocyanes, principalement des d\u00e9riv\u00e9s de delphinidine. L'extrait contient \u00e9galement des flavonols, principalement de la querc\u00e9tine et des d\u00e9riv\u00e9s du kaempf\u00e9rol, comme composants mineurs.<\/p>\n

Il est d\u00e9sormais autoris\u00e9 de l'utiliser dans la coloration des boissons alcoolis\u00e9es, des boissons sportives et \u00e9nergisantes, des eaux aromatis\u00e9es ou gazeuses, des boissons aux fruits, des chewing-gums, des th\u00e9s, des glaces, etc.<\/p>\n

Les colorants bleus naturels actuellement utilis\u00e9s dans le monde proviennent principalement de sources telles que l'extrait de spiruline, le bleu de gard\u00e9nia, l'extrait de fleur de pois papillon, la galdieria sulphuraria et le fruit de Huito. Parmi ces additifs, seuls l'extrait de spiruline (2013) et l'extrait de fleur de pois papillon (2021) sont approuv\u00e9s par la FDA pour une utilisation dans les aliments et les boissons sur le march\u00e9 am\u00e9ricain.<\/p>\n
